Project Scope

The sourcing project covered all ingredients, products, packaging, catering equipment, and the software platform. The sourcing of catering related activities must be executed using the European Public Tendering process.

Hudicor’s Approach

We tackled this project by using the strategic sourcing methodology. An extensive internal analysis, as well as an analysis of the current market and suppliers, served as the basis for this methodology. During the market and supplier analysis, we identified and selected potential candidates for public tendering based on location, scope, and capabilities.

We divided the catering project into several categories, and analysed each one based on requirements for quality and quantity. After receiving the RFx proposals via the public tendering procedure, we set up a fact-based negotiation to finalise the proposal and to assign the different categories. The main focus was price setting, sustainable packaging, transport, and quality. As a result, €360,000 or 17% of the total annual spend was realised in cost savings.
